Good Morning Friends! Our journey begins today. We are going to be creating 3 different types of herb infused honey. Two of these will be for flavor and one will be for medicinal use. The goal during this brief few minutes of time, we all leave behind the stress of our lives right now and feel the magic of honey. Our lives are out of control! Just for a few minutes, lets totally focus on the golden beauty of honey and contemplate how the magic of herbs can both add flavor to our foods as well as heal what ails us.
Here is your first little tidbit to investigate on your own. Herbal medicine has been around for over 10,000 years and was the only medicine available during that time. Herbal medicine is divine. Our beginnings were in a garden where the earth provided everything we needed to survive. Main Stream Medicine or scientific medicine has only been around for a little over 100 years. Those who promoted this form of medicine saw the opportunity to make obscene amounts of money from this new form of medicine when they were not able to profit from herbal medicine. They started the campaign to eliminate herbal medicine and to make people believe it was not real and only witches and snake oil salesmen would ever pursue herbal medicine when scientific medicine was available. I will leave links below so you can do your own research.
Anyway, we are going to make orange peel honey, hot pepper honey, and lemon ginger honey. Just think of all the beautiful flowers that go into making honey. Bees fly all across the landscape gathering the nectar of the flowers to create a perfect super food. Honey has over 600 health giving phytonutrients in it! Some of the benefits of eating honey are:
- Honey helps regulate blood sugar
- Honey is anti-bacterial
- Honey is anti-fungal
- Honey is a natural probiotic
- Honey soothes coughs
- Honey reduces ulcers
- Honey helps heal wounds
Just two important points to remember about honey. It should not be given to infants under 1 year old and it should not be heated above 108 F. Above this temperature the honey is broken down into a glue like substance that is very hard to digest.
To make all of these infused honeys, we are going to add dried herbs to the honey, seal it up and let it sit for at least 2 weeks, preferably a month. After it has time to absorb all the herbal goodness, we will strain out all the herbs and decant our infused honey! For the orange peel honey we add several strips of dehydrated orange slices, peel and all, to a sterilized jar and cover with a mild to medium flavored honey. I have chosen Palmetto honey which I purchased from a local producer at our farmers market because it is produced locally in our area and has the desired mild flavor. If you choose a very strong flavored honey, it will overpower the subtle flavors of the herbs. The health benefits will remain but the flavor will not be as detectable. A few of the health benefits of orange peel are vitamin C levels that exceed that of the fruit, it has been said to help ward off cancer, improve lung health and aids in diabetes treatments. We want to make sure that we include as much of the dried peel as possible while still completely covering with the honey. I am using dried elements because sometimes adding anything that contains water can cause the growth of unhealthy things we don’t want in our final product.
For our hot pepper honey, I have dehydrated some of our locally grown hot peppers including the seeds. Again, we add enough of the dried peppers to loosely fill the jar while still be completely covered with the honey. When this is done infusing, there is nothing quite like the combination of hot and sweet. One of my favorite things to do with this mixture is to pour a good amount over the top of a block of cream cheese and use as a spread for crackers! It is SO good! Hot peppers also offer us a great deal of health benefits. Capsaicin is the most healthful element in hot peppers. It offers a wonderful anti-inflammatory effect which helps in pain relief. Hot peppers are also high in vitamin A, C and K. They are powerful antioxidants and have been reported to help ward off cancer.
Last but not least is our super therapeutic Lemon Ginger Honey. Again, we have dehydrated our lemons and the fresh ginger root. Loosely fill the jars with the dried lemons and ginger and cover completely. This blend is fabulous as a sweetener for any kind of tea, but it is also the most potent herbal medicine in our group of infused honey products. Just look at the health benefits of Ginger alone!

This is a honey that is powerful medicine. It can be taken in 1/2 tsp servings several times a day during illness or it can also be used to sweeten tea. Either way offers the same therapeutic benefits without the harsh side effects of man made medications. God’s medicine is far superior to anything created in a laboratory!
Look how beautiful these jars of honey are!!! We are going to leave them in this window space for the next few weeks. When they are ready, we will come back to them and I will show you how to strain them and decant them for storage.
